Walnut Crusted Salmon Fjord/ Trout Truite saumonée

Ingredients:   

  • 800 g salmon trout fillets (Fjord Trout)
  • 1 cup walnuts, chopped
  • 4 tbsp. fresh dill, minced
  • 4-6 tbsp. olive oil
  • 1 large lemon, juice needed
  • lemon peel from 1/2 lemon, organic
  • pinch of sea salt

Instructions

  • Cut salmon trout (Fjord Trout) fillets into smaller pieces and place onto baking dish. Squeeze 1/2 of lemon juice all over it. Set aside.
  • In a small bowl combine the rest of the lemon juice, olive oil, chopped walnuts, fresh dill, lemon peel and sea salt.
  • With brush (or hands) coat the fillets tops with the mixture. Cover with aluminum foil and bake in preheated oven for 20 minutes.
  • Next, remove the foil and bake with ventilation (hot air) for the next 10-15 minutes (until crust becomes golden). Serve immediately.
