Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil, or avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • salt and pepper, to taste

Instructions:  

  • Preheat your oven to 425°F/220°C. In a small bowl, stir together the garlic powder, basil, thyme, oregano, salt and pepper.
  • Lightly coat the chicken breasts in olive oil. Then rub the herbed spice mix on both sides of the chicken.
  • Place the chicken breasts in a baking dish and bake for 20-25 minutes. Let the chicken rest for a few minutes to allow the juices to redistribute within the meat, then serve.
