2 cans solid white albacore tuna, drained (you can use either water packed or olive oil packed)
1 cup feta cheese, crumbled
1/2 cup sliced kalamata olives
1/2 cup banana peppers (optional)
Greek red wine vinaigrette
3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tsp Dijon mustard
1/2 tsp dried oregano
1/2 tsp Kosher salt
1/4 tsp black pepper
Instructions
Chop the cucumbers and bell pepper, dice the red onion, and halve the cherry tomatoes. Put them in a large salad bowl.
Add the chickpeas, tuna, feta cheese, kalamata olives, and banana peppers to the bowl.
In a small mixing bowl, combine all the Greek red wine vinaigrette dressing ingredients. Use a small whisk or a fork to vigorously whisk everything together for 30 seconds – 1 minute, until combined.
Drizzle about half a cup of the dressing (or more, or less, depending on your preference) over the salad.
Use salad spoons to toss everything together until well combined. Enjoy!
