Mediterranean Cauliflower with Olives and Tomatoes

Ingredients:   

  • 500 g cauliflower florets, fresh or frozen
  • 6 tbsp. butter
  • 400 g Italian pasta tomato sauce, with basil
  • 1 cup olives mix, pitted
  • 1 tsp. basil, dried/fresh
  • 1 tsp. oregano, dried/fresh
  • 1 tsp. sage, dried/fresh
  • salt and white pepper to taste

Instructions:  

  • In a frying pan add butter and cauliflower florets, let sear for 5-7 minutes, or less. Toss cauliflower on each side to coat well in butter (optional step for fresh, preferred for frozen cauliflower).
  • Next, transfer cauliflower to a small baking dish (ceramic), pour over the Italian Tomato sauce and olives. Mix in all the spices too.
  • Bake in the oven on 180C/360F with ventilation/hot air on until brown-ish and crisp on top. Serve immediately.
