Cheesy Green Bean Casserole

Ingredients

  • 1 1/2 pounds fresh green beans
  • 1/2 C chopped onion
  • 1/2 pound sliced mushrooms
  • 1/2 C butter
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp ground thyme
  • 1 1/3 C 2% milk
  • 1 1/2 C Swiss cheese shredded

Instructions

  1. Preheat oven to 350°F
  2. Cut off ends of green beans and slice in half. Cook green beans in boiling water until just tender, about 7-10 minutes. Drain and set aside. 
  3. In a large skillet over medium heat melt butter add in chopped onion and mushrooms and cook and stir until tender, about 5-7 minutes. 
  4. Stir in flour and spices until well combined. Gradually stir in milk and bring to a boil until thick, stirring frequently
  5. Once it has thickened, remove from heat and blend in 1 cup of the shredded Swiss cheese
  6. Mix in the cooked green beans and turn into a shallow baking dish, if you don’t have an oven safe skillet. Sprinkle with remaining 1/2 C of shredded Swiss cheese. 
  7. Bake uncovered until heated through, about 30 minutes.
