Slow Cooker Mediterranean Chicken

Ingredients

  • 1 tbsp olive oil
  • 2 lbs. boneless skinless chicken thighs
  • 1 sweet onion, sliced thin
  • 3 garlic cloves, minced
  • 1 cup roasted red peppers, chopped (or peppadew peppers)
  • 1 cup olives (any kind)
  • 1/2 cup chicken broth
  • 1 tbsp. capers (optional)
  • 1 tsp. oregano
  • 1 tsp. dried thyme
  • 1 tsp. rosemary
  • 1 bay leaf
  • Salt and pepper
  • 1 lemon (juice for serving)

Instructions

  1. Add the olive oil to a saute pan over medium high heat. Brown the chicken on both sides. Remove the chicken and set aside. Add the onions and garlic. Cook for 4-5 minutes until tender.
  2. Add the chicken, onion, garlic, and remaining ingredients to the slow cooker. Cook on low for 4 hours or until chicken is fork tender. Season with salt and pepper as needed. Serve with fresh lemon juice.
